Whole Nut Granola
In our restaurants we typically refer to this as "GRØDs granola", because we use this variant as a topping on Acai Bowl, Oat porridge with apple compote and on Rhubarb Chia Special. We're calling it "Whole Nut" because we struggled to find a good base granola with whole roasted nuts. The almonds hazelnuts are complimented by crispy grains, kernals and dried mulberries, which a toasted with coconut sugar, vanilla and olive oil.
Since our first porridge restaurant opened in 2011, we have been wildly fascinated by grains, and nerded out on the many different grains as well as cooking techniques. We have cooked, fried, smoked, baked, dried and roasted all kinds of grains - some more successful than others. We have also experimented a ton with granola - the roasted luxury version of muesli, which have become really popular in Denmark and the rest of the world.
