Almond Butter Granola
We love almonds! So much so that we have made a granola that not only contains whole almonds, but where all the grains, kernels, seeds and dried berries are turned in almond butter before the granola mixture is toasted in the oven. It results in a deep nutty flavour, which combined with the sweetness of the cranberries and the characteristic taste of the roasted coconut flakes, gives a complex and harmonious granola.
Since our first porridge restaurant opened in 2011, we have been wildly fascinated by grains, and nerded out on the many different grains as well as cooking techniques. We have cooked, fried, smoked, baked, dried and roasted all kinds of grains - some more successful than others. We have also experimented a ton with granola - the roasted luxury version of muesli, which have become really popular in Denmark and the rest of the world.
